AGEING: The grapes are harvested exclusively by hand. Fermentation then takes place in stainless steel tanks at controlled temperatures. Fermentation is followed by aging on the fine lees for a few months before the wine is finally racked.

AROMA: After the selective harvest, the grapes are gently pressed and fermented in temperature-controlled stainless steel tanks. Developed consciously without the use of wood, this drop is full of fruit and refreshing liveliness.

Christian Stahl doesn't want to have anything to do with Franconian winegrower folklore and Bocksbeutel nostalgia. He slipped out of the Frankenwein drawer early on and thought "out of the bucks". When he took over his parents' business in Auernhofen, he not only put his own stamp on the wines, but also on the marketing. He dispenses with predicate designations and claims of the sites and prefers to classify his wines in their own categories. With the base line "Secondary" he demonstrates the perfect balance of enjoyment and craftsmanship. Fine wines with structure and excitement are the result of 1,000 hours of manual work. This is contemporary Franconian wine culture at a very high level. Christian Stahl has particularly strict requirements for the grapes in his "Best of" wine line. It reduces the area yield to a maximum of 35 hectoliters per hectare and thus undercuts the VDP regulations for “large plants” by 15 hectoliters. The wines produced in this way show a clearly defined fruit image and bear a clearly recognizable signature. The Tauber Valley sites, which are characterized by shell limestone and gypsum keuper, bring a high level of minerality and a certain saltiness to the wines. Stahl shows a special touch with his Silvaners and when dealing with international grape varieties such as Sauvignon Blanc.
