STORY: The Aarau wineries based in Valais in Switzerland were founded in 1873 and are now one of the most important wine trading houses in Switzerland.

VINIFICATION: Only wines made from Pinot Noir and Gamay grapes from Valais may be called Dôle . Fermentation takes place in stainless steel tanks and large wood at controlled temperatures. The aging takes place in oak barrels for a few months before the wine is released for sale.

AROMA: Aromas of red fruits such as cherries and raspberries with a light note of spices.

EVALUATION: Soft on the palate, round with a good body, underlaid with clear notes of berries, cherries and plums, the tannins are fully integrated, as is the finely balanced acidity, good length with promising potential.

SERVING RECOMMENDATION: Mediterranean or oriental dishes, with red meat, grilled and medium-ripened sheep's or goat's cheese.
