VINIFICATION: After the selective harvest, the grapes are gently pressed and fermented in temperature-controlled stainless steel tanks. Matured deliberately without the use of wood, this drop is full of fruit and refreshing liveliness.
AROMA: Aromas of ripe exotic fruits, stimulating spring blossoms and the finest notes of precious wood, ripe pear.
RATING: Smokey notes on the palate, roasted almonds, peanut aromas, lilac, fine aniseed note combined with profound minerality.
SERVING RECOMMENDATION: A great accompaniment to Provençal cuisine
As a former monastery winery of the Luxembourg Jesuits, the van Volmex winery has had large plots in the core locations of the most important Wiltingen vineyards such as "Scharzhofberger", "Kupp" and "Gottesfuss" since the early 18th century. The estate was acquired by Roman Niewodniczanski in 1999 and has since been extensively restored and expanded to include numerous top locations. According to the Prussian classification of 1868, all sites belong to the two classes of the highest quality. 98% of them are planted with Riesling. The average age of the vines is 40 years. The declared goal of the young team, which has been expanded to include cellar master Dominik Völk, is to build on the former reputation of this traditional Wiltingen estate with a consistent pursuit of quality. On the basis of the lowest yields, the environmentally friendly cultivated slate slopes produce extremely extract-rich, minerally finesse wines with opulent Riesling fruit, a clear site profile and great aging potential.
