VINIFICATION: The harvest is carried out exclusively by hand with strict selection of the appropriate grapes. Fermentation takes place at controlled temperatures of 25°C and 30°C. The wine is aged for 12 months, 10% of it in barriques to give it its unique structure. No filtration before bottling!

AROMA: Aromas of fresh cherries, strawberries and red currants with a light note of spices.

RATING: The palate is dominated by riper notes of cherries and blueberries as well as light "garrigue" aromas of thyme and herbs de Provence. Round and fine, expressive with a wonderfully fruity, soft finish.

SERVING RECOMMENDATION: At a serving temperature of approx. 15°C, an excellent accompaniment to fine roast lamb, fine beef fillet or complex, medium-ripened cheeses. Insider tip: with aubergine gratins.
