  • VINIFICATION: He only uses hand-picked Riesling grapes and finely tuned botanicals such as grapefruit, kumquat or pink pepper berries, which are carefully soaked and distilled in a pot-still process to preserve the aroma. The brandy then enjoys the privilege of aging for four months in barrique barrels that were previously used for the expansion of the Johannisberg Alte Reben Riesling for two years.

"As little as possible, as much as necessary" is his motto, which is a plea for restraint in all artificial interventions in the natural development of wine.
