VINIFICATION: The grapes from the oldest vines in the plot are pre-selected twice before being harvested by hand when fully ripe. After 18 hours of maceration, the must is placed in an older tonneau and in a stainless steel tank. Spontaneously fermented, it is inoculated with a pure culture yeast and fermented in a cool place. The wine stays on the yeast until May and undergoes a slight batonnage after fermentation. Bottling takes place at the end of June.
AROMA: Dry, mineral white wine with nuances of pear and wonderful length.
RATING: Due to the long aging on the fine lees, it acquires a unique complexity and density that promises excellent storability.

After taking over their parents' winery, Stephan and Georg Schwedhelm work persistently to bring the Zellertal back to the top. In the meantime, the elite winegrowers, who have recognized the potential of the region, have also become aware of the Zellertal. The Schwedhelms cleaned up the valley's past uncompromisingly and their wines reflect this independence in the best sense of the word. They don't even try to fit into a grid. They simply taste like the Zellertal. The barren soils, massively interspersed with limestone and clay, ensure a cool, mineral and radiantly clear style, the Montrachet of Germany, so to speak. All vines are on a pure south-facing slope with an incline of up to 35 degrees and soak up plenty of sun. This gives the wines a mature fruit aroma and sufficient power and fullness. Rarely does one come across a collection in which each individual wine so clearly expresses the vision of its creators.
