STORY: In 1963, various quality-oriented winegrowers in the Sancerre region got together to join forces and bottle and market their wines together.

AGEING: After the harvest, spontaneous fermentation takes place in stainless steel tanks at a controlled temperature of around 18°C. This wine then refines for a few more months in the tank before it is bottled relatively young and released for marketing.

AROMA: Pleasant mineral notes and hints of citrus fruits.

EVALUATION: Wonderful as an aperitif or with grilled fish, seafood or goat's cheese.
