VINIFICATION: The harvest is guided by the rhythms of the moon, so most plots are harvested in early September. After the selective harvest, the grapes are gently pressed and fermented in temperature-controlled stainless steel tanks.

RATING: Soft color reminiscent of rose petals. The nose is very open: fresh and light flowers, delicate and delicious fruits such as peaches form a unit with a typically Provençal, airy character. Fruity and delicate on the palate, full of pleasure, with lots of freshness and aromas of white fruits.

The Commanderie de Peyrassol was founded by the Knights Templar in the 13th century. Located at the foothills of the Massif des Maures between the Mediterranean Sea and the Verdon, the estate has nearly 850 hectares of oak, olive and scrubland that shelter at its heart the centuries-old winery of great renown, Château Peyrassol. The winery has been owned by Philippe Austruy since 2001 and produces sublime wines in AOP Côtes de Provence. Peyrassol has made a name for itself for wines in the Côtes-de-Provence. Elegant and airy whites, silky and deep reds, subtle, fresh and mineral rosés, the three colors each time pay homage to the Provençal terroir.
