STORY: Out of respect for the environment, the Commanderie de Peyrassol switched to controlled organic cultivation in 2019.

VINIFICATION: After the selective harvest, the grapes are pressed quickly and gently. Following the temperature-controlled fermentation in stainless steel tanks, the cuvée rests on the fine lees for a few months before the wine is bottled.

RATING: In the glass, the wine shimmers in the characteristic pale pink of Provencal rosé wines. Nose and palate feel delicate hints of raspberry and strawberry as well as citrus notes. On the tongue, the rosé impresses with its delicacy, freshness and fruitiness. In the aftertaste again berry aromas.

The Commanderie de Peyrassol was founded by the Knights Templar in the 13th century. Located at the foothills of the Massif des Maures between the Mediterranean Sea and the Verdon, the estate has nearly 850 hectares of oak, olive and scrubland that shelter at its heart the centuries-old winery of great renown, Château Peyrassol. The winery has been owned by Philippe Austruy since 2001 and produces sublime wines in AOP Côtes de Provence. Peyrassol has made a name for itself for wines in the Côtes-de-Provence. Elegant and airy whites, silky and deep reds, subtle, fresh and mineral rosés, the three colors each time pay homage to the Provençal terroir.
