VINIFICATION: The grapes for the varietal Shiraz Kalimna Bin 28 were harvested in their various locations and vineyards when they were optimally ripe and fermented in the traditional way. Aging takes place for twelve months in small barrels (hogsheads) made of American oak that have been used several times. The assemblage to the Kalimna Bin 28 Shiraz Final Blend only took place after the barrel had matured. The wine is now resting in the bottle for a few months .

AROMA: Aromas of sweetly ripened dark fruit such as blackberry jam and morello cherries with fine notes of tobacco, oatmeal, some wax or polish, spicy aromas of cinnamon and liquorice .

EVALUATION: Powerful, deep and full-bodied on the palate, with a good body, underlaid with warm, spicy notes of mocha, chocolate and slightly smoky hints of graphite, the tannin is fully integrated, as is the finely balanced acidity, good length with promising potential.

SERVING RECOMMENDATION: Roasted lamb and beef, lamb tajine, tender game ragout, poultry, rabbit with prunes, lentil dishes with Mediterranean or Oriental spices, medium-ripened sheep or goat cheese.
Like many wineries, Penfolds started out small. The long-established winery was founded in 1844 by the English doctor Dr. Christopher Rawson Penfold, who recommended wine as a health tonic to his patients. He planted the vines in Magill, nine kilometers from Adelaide in southern Australia. Magill Estate is still the headquarters of the house today. By 1962 the estate was carried on by Rawson Penfold's descendants. Since 2002, the Grange has also been vinified again on Magill Estate. Peter Gago, Penfold's chief oenologist: born in England, raised in Australia, Peter Gago studied math and chemistry, put the oenologist on top at Roseworthy College (as the best of the year) and started his meteoric career at Penfolds in 1989. After fizz and red wine, Gago took over responsibility for all wines in 2002, succeeding John Duval as Penfold's chief oenologist. He is only the fourth cellar master since Max Schubert and keeper of the world-famous Grange. More than any of his predecessors, Gago tours the world, presents penfolds and always likes to see what other winemakers are up to. In his own cellar, he loves restraint in order to let his wines have their powerful, natural voice.
