VINIFICATION: After the selective manual harvest, the grapes are not pressed by machine, but only stamped with bare feet! Ten months aging in new American oak barrels. The wine is bottled unfiltered.

AROMA: Dense purple garnet. Typical notes of fresh black cherries, pepper, raw meat and coffee, highlighted with spices and blackcurrants and blackberries.

ASSESSMENT: Pleasantly cool palate, not overextracted and yet firm, full-bodied, strong and again fruity with a full, mouth-filling nature. Not broad and sweet, but slightly cool; perfectly dense and tightly meshed.

SERVING RECOMMENDATION: with classic Spanish cuisine such as paella, albóndigas, pinchos morunos; but also with braised and grilled meat, sausage, pork, roasts.
Since 2006, the Spanish star oenologist Pedro Aibar has been working with a lot of commitment, diligence and the help of friends to realize a family dream.
