The Serpico is an absolute top red wine that completely redefines the usual style of Australian wine: For its production, Frank Mitolo uses the traditional Italian technique of the Amarone process, in which the harvested grapes are dried for several weeks in temperature and humidity-controlled storage (more modern variant).
