Frank Serpico, the inspiration for the famous film starring Al Pacino, really existed. A man who swam against the tide, like Mitolo "Serpico" Cabernet Sauvignon in the land of Shiraz! The Serpico is an absolute top red wine that completely redefines the usual style of Australian wine: For its production, Frank Mitolo uses the traditional Italian technique of the Amarone process, in which the harvested grapes are dried for several weeks in temperature and humidity-controlled storage (more modern variant). A natural concentration of sugar and aromas is achieved in these wines. The wine made from it shows not only a high alcohol content, but also an enormously wide variety of taste nuances. Even when young, it is an enormous pleasure to drink, but at the same time has great aging potential. Winemaker Frank Mitolo achieves the deep purple, almost black color and the impressive depth of flavor of the "Jester" Cabernet Sauvignon by drying 20% ​​of the grapes in the Amarone style in order to concentrate the aroma to the ultimate degree. This makes the "Jester" Cabernet the little brother of the Serpico, which is 100% produced using the Amarone process. Basically, the short history of Mitolo Winery is an incredible story from AZ. Or would you think it very likely that the southern hemisphere's largest potato farmer could produce one of Australia's top three wines within five years by hiring a previously unknown 23-year-old winemaker just because he's a friend? But that's exactly what happened.
