The Shiraz grapes for this red wine come from the Willunga District of McLaren Vale, where heavy gray clay soils mixed with Biscay clay over sandstones prevail. Combined with the maritime climate, the result is uniform ripening conditions and rich fruit aromas and ripe tannins. Winemaker Frank Mitolo achieves the deep purple, almost black color and the impressive depth of flavor of the "Jester" Cabernet Sauvignon by drying 20% of the grapes in the Amarone style in order to concentrate the aroma to the ultimate degree. This makes the “Jester” Cabernet the little brother of the Serpico, which is 100% made using the Amarone process. Basically, the short history of Mitolo Winery is an incredible story from AZ. Or would you think it very likely that the southern hemisphere's largest potato farmer could produce one of Australia's top three wines within five years by hiring a previously unknown 23-year-old winemaker just because he's a friend? But that's exactly what happened. In 1999, Frank Mitolo had had enough of potatoes, sold part of his empire, invested the proceeds in vineyards in McLaren Vale and gave his friend Ben Glaetzer, who five years later became Australia's Young Winemaker of the Year at the age of 28, a chance to show what he could do. The first vintages already received very high ratings, with the GAM Shiraz standing out in particular.
