STORY: Sons de Prades is the little brother of Milmanda Chardonnay, the grapes ripen in the same winery on the same mostly silty loamy soil in plot Estret 3. In the early morning hours, when the vines are still shrouded in cold mist, there is absolute silence here.

VINIFICATION: For Sons de Prades, the grapes were gently pressed and the musts were fermented for twelve days at controlled cool temperatures of around 14 to 16 °C, mostly in stainless steel tanks (seventy percent), to a lesser extent in oak barrels (thirty percent) and after the alcoholic fermentation was complete, around thirty percent of the wines were matured for six months in barrels made of particularly fine-pored French oak (one hundred percent new wood). Only then were both batches blended back into Sons de Prades and the wine was bottled in March 2018.
AROMA: intense, lush, fruity bouquet with aromas of ripe citrus fruits (tangerines), fine hints of grass and fragrant Mediterranean herbs (thyme)

RATING: juicy and full-bodied on the palate, aromatically concentrated, intense and balanced with fine acid freshness
SERVING RECOMMENDATION: with fine tuna carpaccio, fried salmon or turbot, arroz caldoso de bogavante (typical rice dish with lobster in a spicy broth), risotto with mushrooms or medium-ripened cheese such as Comté, Emmental or Spanish goat cheese (Montsec)
