STORY: With its mystical name, Salmos (engl. the Psalms) fits perfectly into the monastic priory. For Torres, it is also a homage to the Carthusian monks, who settled in the region shrouded in mystery as early as 1094 and contributed greatly to the formation of myths and legends.

AGEING: The grapes fermented at controlled temperatures in stainless steel tanks. After an extended maceration of 25 days, the wine is put into the barrel in order to extract the most intense colourings, aromas and gentle tannins from the grape skins. Salmos is then aged in French oak barrels for 16 months.

AROMA: Fine aromas of candied dark fruits (berries, black cherries), caramel and cocoa, finely highlighted with fresh floral accents of violets and thyme.
RATING: Very gentle, soft and full-bodied on the palate with perfectly integrated, sweetly mature tannins, which give the finale a wonderfully long and highly elegant aftertaste.
SERVING RECOMMENDATION: Delicious with game dishes (roast venison, leg of venison, venison stew), lamb and beef or with mature hard cheeses.
Although the Torres family has owned vineyards in Priorat since 1996, they only vinified their own DOC Priorat wine in the 2005 wine year. Mireia Torres created this powerful composition of local and international varieties that grow in the terraced vineyards of the municipalities of Porrera and El Lloar on the dark Llicorella slate soil characteristic of the region. This hard, nutrient-poor soil curbs the vines' energy and growth potential, which means that they only deliver small yields that are extremely concentrated in terms of aroma. At the same time, it regulates the temperature in the vineyards by storing the heat of the day and releasing it again during the cool hours of the night. On March 10, 2007, the first Salmos (from the 2005 vintage) was presented to the press and the general public. In a sensational launch with the mysterious Torres Code, as the Spanish magazine La Vanguardia headlined (based on the Da Vinci Code), Torres combined the introduction of the new wine with an exciting guessing game that they had developed together with crime writer Javier Sierra. Salmos was the gateway to a mysterious journey through wine culture and a lasting promise of quality!
