STORY: Although the Torres family has owned vines in Priorat since 1996, they only vinified their own DOC Priorat wine with Salmos in the 2005 wine year. To be more precise, it was Mireia Torres who, with Perpetual, created another powerful composition, this time from the local varieties Garnacha Tinta and Cariñena.

AGING: The grapes are then macerated for 32 to 35 days and fermented in stainless steel tanks for 12 days at a controlled temperature of 27ºC. Finally, the wine matures for around 16 months in new French oak barriques and is bottled from April
AROMA: aromatic and enormously complex with hints of lavender embedded in pleasant toasted notes, the scent of mossy forest floor and sandalwood

EVALUATION: full-bodied, soft and round on the palate, with very concentrated aromas, the tannins are plump, ripe and sweet, and accompany a wonderfully long-lasting finish
SERVING RECOMMENDATION: with game dishes (roasts and ragouts), lamb or beef
