AGING: For the Torres family, 2014 is the third vintage of their Chilean premium Pinot Noir from the slate terraces of Empedrado, Maule. The grapes were harvested by hand from April 1st to April 11th, 2014, brought immediately to the winery and macerated in small tanks for four days, then fermented within a week, mainly with the natural yeasts at controlled temperatures of around 24 °C.

SERVING RECOMMENDATION: with rabbit ragout and hare pepper, roasted wild mushrooms, wild fowl (guinea fowl, pheasant) or goose confit
