  • STORY: The Elqui Vallley is currently the northernmost wine region in Chile. Like Limarí, it belongs to the Coquimba region, around 600 kilometers north of the capital Santiago. Traditionally famous for the Pisco grape brandy, Elqui is now increasingly establishing a reputation for exquisite wines. The vines grow at altitudes of up to 2000 m and enjoy the cool Pacific mist in the morning and the fresh fall winds from the Andes in the evening.

  • VINIFICATION: The grapes for Torres varietal Cordillera Sauvignon blanc were harvested in March and immediately brought to the winery, where they were first cold-mashed for three hours, then slowly fermented at controlled cool temperatures of around 15 to 16 °C within 19 days. In order to preserve their characteristic fruit and lively freshness, which is also typical of their origin and grape variety, the wines were not placed in oak barrels after the alcoholic fermentation was complete, but matured purely in stainless steel tanks and in the bottle.

  • AROMA: pale, shiny straw yellow with greenish reflections Scent: intense aromas of juicy citrus fruits merge in the bouquet with the slightly spicy notes of yellow pepper and a hint of chili typical of Elqui-Sauvignon

  • ASSESSMENT: very fresh, complex and lively on the palate, with racy acidity, clear minerality and a long, fruity, aromatic finish

  • SERVING RECOMMENDATION: Delicious as an aperitif, with oysters, fresh and grilled seafood, poached fish with lemon or goat cheese
