STORY: The Maipo Valley, at the foothills of the Andes south of the capital Santiago, is a classic red wine region, with Cabernet Sauvignon undisputedly the leading red grape. At an altitude of 730 meters, the late-ripening variety benefits from the high temperature amplitude, the constant alternation of hot days and cool nights, which extends their natural hanging time on the vine and gives the grapes plenty of time to ripen aromatically and phenolically healthy and juicy, powerful, with lots of juicy fruit and a perfect acid-sweet balance. With more than 5,000 kilometers of coast, mountains up to 7,000 m high, in between countless small and large valleys along the Andes, Chile offers plenty of room for diversity.

VINIFICATION: The selected grapes for Cordillera Cabernet Sauvignon from the Maipo Valley are harvested in April, brought immediately to the winery, strictly sorted, completely destemmed, gently ground, mashed and fermented within seven days at a controlled temperature of 28 °C.
AROMA: deep, dense dark ruby red Scent: a lot of sweetly ripened varietal fruit in the bouquet with notes of preserved black wild berries, blackberries and fine hints of leather
ASSESSMENT: juicy, powerful, very elegant on the palate with gently ripened tannins, long in the finish with an aromatic aftertaste of dark, spicy fruit with a hint of freshly roasted toast

SERVING RECOMMENDATION: preferably with meat, beef, lamb, game, roasted, from the grill, with Mediterranean herbs, with fruity berry compote or reduced (red wine) sauces, also with an oriental touch, delicious without meat with braised aubergines and peppers
