VINIFICATION: At the end of September, the Tinto fino grapes are brought in, first cold mashed in the winery and then fermented within a week at controlled temperatures of 25 to 30 °C in stainless steel tanks.
AROMA: fragrant aromatic bouquet of ripe red and black fruits (blackberries, cherries) underlaid with fine spicy notes of pepper and liquorice

RATING: Velvety and full-bodied on the palate with elegantly mature tannins, intense, round and harmonious right up to the finale with a long, spicy-aromatic aftertaste of wild berries
SERVING RECOMMENDATION: preferably with hearty meat dishes, such as lamb and beef stew, oxtail, game (roasts and ragouts) or also grilled steaks and chops, Celeste offers meatless enjoyment alongside spicy risotto and pasta dishes with braised aubergines, mushrooms, pumpkin, paprika or matured soft cheese (brie, camembert)
