VINIFICATION: The Tempranillo grapes for Torres varietal Altos Ibéricos Reserva were selectively picked by hand and immediately brought to the winery, where they were macerated in stainless steel tanks and fermented within a week at controlled temperatures of around 26 to 28 °C. After completed alcoholic fermentation and a total of 15 to 20 days of maceration, the wines were carefully drawn off and initially placed in new and used French oak barrels for 16 months to mature, then all batches were blended back into the final cuvée, filled into the bottles and now aged in the bottle under optimal storage conditions (temperature, humidity) for a further 12 months to harmoniously round off and complete before the wine was finally classified as Altos Ibéricos Reserva is allowed to leave the bodega.

AROMA: intense aromas of fresh and dried fruit on the nose, such as juicy black cherries, red and black wild berries, dried figs, alongside spicy notes and a hint of pepper
EVALUATION: firm and velvety on the palate at the same time with the aromatic fruit and spice of the bouquet, fleshy, silky, long and full-bodied, supported by elegantly mature tannins
SERVING RECOMMENDATIONS: with roasted and braised lamb and beef, roast pork and poultry, the traditional meat and vegetable stews of Castilian and Riojan cuisine (with onions, chickpeas, carrots, peppers, etc.) or with medium-ripened pecorino cheese
