EXPANSION: Hand picking of the ripe grapes. Soft pressing followed by the first fermentation. The foam that forms is skimmed off and the wine is then bottled, in which the second fermentation takes place with the help of the so-called dosage.

EVALUATION: Bottle fermentation according to the champagne method. Noble fruit notes, finely balanced and elegant with stimulating perlage.
