• EXPANSION: Champagne: A 1927 law limits the Champagne growing area to around 30,000 hectares in the Marne hills. 17 communes of Champagne are classified as Grand Cru and 44 as Premier Cru. Champagne is the coolest wine-growing region in France and is subject to the moderate influence of the Atlantic climate. The region is known for its chalk soil.

• ASSESSMENT: The Cuvée Blancs de Blancs is aged in the wine cellar for an average of 5 years and, after disgorging, is given a six-month rest period to give the final touch to its maturity. The dosage is adjusted for each vintage and is 8-10 g/l. Golden color, bright, with slightly green reflections. Extremely fine, delicate, creamy effervescence. Clear, exceptionally mineral bouquet with notes of citrus fruits, aromas of white flowers scented with vanilla and aromas of harvest.

• SERVING RECOMMENDATION: Goes well as an aperitif, with beef carpaccio with white truffle, lamb broth with fennel, fried turbot, scallops, Bresse poularde with foie gras and black truffle, mild goat's cheese and creamy cheeses.
