• EXPANSION: Champagne: A 1927 law limits the Champagne growing area to around 30,000 hectares in the Marne hills. 17 communes of Champagne are classified as Grand Cru and 44 as Premier Cru. Champagne is the coolest wine-growing region in France and is subject to the moderate influence of the Atlantic climate. The region is known for its chalk soil.

• JUDGEMENT: Salmon pink with bright red reflections. Very intense color. Fine, exquisite, dynamic effervescence. A summery-fresh, wonderfully intensive bouquet with notes of vineyard peaches, currants and blood oranges. After contact with air, notes of apricots from Roussillon, reminiscent of jam.

• SERVING RECOMMENDATION: Excellent as an aperitif, with beef carpaccio with white truffle, lamb broth with fennel, fried turbot, scallops, Bresse poularde with foie gras and black truffle, mild goat's cheese and creamy cheeses.
