AGEING: After the careful pressing, the first alcoholic fermentation takes place in temperature-controlled stainless steel tanks. According to the méthode traditionnelle, the second fermentation takes place in the bottle (champagne process). The crémant then matures for many months in the deep chalk limestone cellars until it is perfect.

ASSESSMENT: Classic bottle fermentation and at least 12 months of aging on the fine lees give Despas Crémant Rosé its gentle fullness and at the same time form the elegant framework for its subtle yet very present red berry fruit with a hint of citrus freshness.
