STORY: Just before the French-Spanish border, in Corneilla del Vercol, is the Château de Corneilla. Originally built by the Knights Templar in the late 12th century, the estates passed into the hands of the Jonquères d'Oriola family in 1485, who have continuously cultivated vines on the manorial estate for 27 generations.

VINIFICATION: After the selective harvest at night, the grapes are gently pressed and fermented at low temperatures and aged in stainless steel tanks.
AROMA: A ruby red color in the glass, intense nose of red fruits such as plum, cassis and raspberry.
EVALUATION: Balanced aromatic on the palate with a long fruity finish.
SERVING RECOMMENDATION: goes well with light antipasti, tuna tartare, roast veal, poultry or mature cheese

Originally built by the Knights Templar in the late 12th century, the estates passed into the hands of the Jonquères d'Oriola family in 1485, who have continuously cultivated vines on the manorial estate for 27 generations. The so-called "Terroir des Aspres" offers unique conditions for the production of origin-oriented wines. In small, sun-scarred vineyard plots swept by mountain winds, Williams vines, some of which are very old, bravely cling to the barren, stony-clayey rubble soil. The altitude on the foothills of the Pyrenees and the cold nights have a positive effect on the balance of the wines. When working in the vineyard, only the bare essentials are done. William selects the grapes by hand and otherwise lets nature take its course. True to the motto: less science, but all the more passion. In this way, excellent food companions are born, which, as a reflection of their origin, represent an absolute reference of Roussillon.
