STORY: Markus Schneider and Thomas Hensel work together for this wine - the project bears the beautiful name Hensel & Gretel. For their Sauvignon Blanc they rely on power and fruit with a hint of wood. The fourth wine has now emerged from the "fairy tale project" of winegrowers Thomas Hensel and Markus Schneider.
-
AGING: The grapes come from both wineries and the wine matured partly in large barrels. Six hours on the mash and then gently pressed.
-
AROMA: Spicy gooseberries, even some cassis and of course paprika form a fresh, stimulating play of aromas
EVALUATION: The result is a highly aromatic wine with typical Sauvignon aromas of citrus fruits, gooseberries and hay. It develops both a juicy and crisp freshness and a supple, soft fullness. A rich wine that is perfectly balanced and inspires the palate.
SERVING RECOMMENDATION: Perfect with poultry or white meat, but also with spicy cheese – even blue cheese.
Markus Schneider vinifies the Hensel and Gretel wines together with Thomas Hensel from Bad Dürkheim. Thomas Hensel is an old friend of Markus Schneider. Both were former co-founders of Junge Wilden who set out to do things differently. The Hensel and Gretel line developed from this. In addition to the Sauvignon Blanc Witch Hunter, there is also a Hensel and Gretel white and Hensel and Gretel red wine. The vines for the Sauvignon Blanc Witch Hunter come from the plots of both friendly wineries. With an eye-catching label, the spirit of perpetual revolution still shines through here.
