AGEING: After the harvest, the grapes are pressed slowly and carefully at a low temperature. Fermentation takes place in steel tanks at 16°C and lasts 20-30 days. 30% of the must is fermented without skins, 70% of the must floats on the skins for a short time after pressing, in order to gain the characteristic colour. Before bottling, the wine is refined on the yeast.
