EXPANSION: After fermentation, the base wine ages in oak barrels for several months before it is aged on the fine lees using the classic method of bottle fermentation.

RATING: The Rubis overwhelms with its bright and sparkling color reminiscent of ripe cherries; very fine and hardly visible through the crimson pearls. Beautiful pink foam, reminiscent of a peony and slightly violet. Its bouquet resembles a sea of red fruits. On the palate, the Rubis is an explosion of fruit flavors: blackberry, black currant, raspberry and strawberry.
